As I’ve mentioned in the past, I’m always trying to work more chicken dishes into my recipe repertoire. Chicken Parmesan is one that I’ve made several times, and I’ve finally perfected it enough to share it with you all. It’s one of my favorites!
Chicken Parmesan
Ingredients
- 2 large boneless skinless chicken breasts
- 3/4 cup bread crumbs I use Panko
- 1/4 cup Parmesan cheese powdered or freshly grated
- 3/4 tsp basil dried or fresh
- 3/4 tsp parsley dried or fresh
- 1/2 tsp garlic powder
- 1/2 tsp paprika I use smoked paprika
- 1 egg
- 1/2 jar spaghetti sauce
- 1 cup shredded mozzarella cheese
- 1/3 cup Parmesan cheese powdered or freshly grated
Instructions

Grab two bowls. In the first: mix the bread crumbs, Parmesan cheese, basil, parsley, garlic powder, and paprika. In the second bowl, beat the egg.

Prepare the baking dish by coating it with oil. Cut the chicken breasts in half so you have four thin, even fillets.

Coat each chicken breast with egg, and then coat it with the bread crumb mixture.

Place chicken breasts in baking dish, and bake at 375F for 12 minutes per side. Using a spoon, cover chicken breasts with spaghetti sauce, mozzarella cheese, and Parmesan cheese.

Bake for an additional 10 minutes, or until chicken is fully cooked (time will depend on thickness of chicken breasts). Chicken should be cooked to an internal temperature of 165.

Just curious do you create meal plans? So you both know ahead what is for supper?

Lol! I meal plan most weeks, usually on Sunday or Monday before going to the store. It takes a little bit of time and forethought, but it makes the week a lot less stressful to have a plan.

I don't fully plan in advance because I never know what meat I can find at the store, or what the use-by dates will be. I only go shopping once a week. I buy the meats with the longest use-by dates I can find, and keep a list on the front of the fridge of when each cut expires. Then dinner each night starts with whatever package of meat needs to be used up next.

I do for lots of recipes, but since this is a quick recipe for busy days, I often just use store-bought.

We can't take the high sodium of commercial brands. Even sodium from the cheeses would be a problem.

Hi Ellie! If you like chicken recipes here's another chicken breast recipe you can try sometime! It's very easy. Called Smothered Chicken. 8 chicken breasts (seems like a lot. If you half it, I don't see why 4 breasts wouldn't work)
8 slices American cheese
1 can cream of mushroom
1/2 cup water
1 box StoveTop dressing
1/2 cup melted butter
Put chkn breasts in a 9×13 pan. Place slices of cheese over chicken. Mix soup and water. Pour over chicken. Sprinkle stovetop dressing over chicken. Pour melted butter over all. Bake at 350 for 1 hour or until done.

Make it in advance or on a weekend when you do have time, and reheat it at suppertime. I often cook dinner first thing in the morning, especially in the summer.
