In honor of the Super Bowl– which is coming up this Sunday, February 5th, for those who don’t follow American football–I put together this tutorial.
If you’re going to a Super Bowl party, this snack is sure to wow your friends and family. Even if you won’t be watching the game, you can still whip up a batch of these football strawberries and share them with loved ones–or eat them all yourself!
For Super Bowl Sunday
Ingredients:
Milk, semisweet, or dark chocolate chips or melting chocolate (approximately 2 cups/12oz)
White chocolate chips or melting chocolate (approximately 1 cup/6oz)Directions:
Wash strawberries, and allow them to dry completely. Keep the stems on the strawberries.
Melt milk, semisweet, or dark chocolate on the stove or in the microwave. I prefer the microwave because I have found that it provides greater control over the melting process.
My melting process is as follows: Put chocolate chips in a microwave safe bowl, and microwave on high for 40 seconds. Remove and stir. Return to microwave for 20 seconds, and stir. Return to microwave for 15 seconds, and stir. If more melting is needed, return to microwave in 15-second intervals, stirring in between.
Grab the leaves of each strawberry, hold it over the bowl of melted chocolate, and gently run chocolate over the strawberry using a spoon. Allow the excess to drip off into the bowl. Scroll down to watch a video I made to explain this step further.
Place chocolate covered strawberries on a cookie sheet covered in plastic wrap, parchment paper, or wax paper. Allow strawberries to dry until the chocolate is fully hardened.
When hardened, melt the white chocolate. Unlike the dark chocolate, you don’t want to over-melt the white chocolate, or it will be runny and difficult to work with.
Pour melted white chocolate into a piping bag (also called a pastry bag) with a thin, circular tip.
Draw lines of white chocolate on strawberries as shown. You will need to work quickly so the white chocolate does not harden in the piping bag.
Place finished strawberries on a pan without a lining. (The lining may move and smudge your beautiful lines.) Allow white chocolate to dry fully before transporting strawberries.

I'm surprised anyone is allowed to do that out of their home. Where I live, you need a health-inspected kitchen to be able to sell any food product. Even kids' lemonade stands are technically illegal, although I don't know a kid yet who's been hauled off in cuffs for trying that. But it's a law on the books. Also, you have to have nutritional information, ingredients, and possible allergy warnings on any food product you sell. That stops a lot of people from doing home-based food selling, since they don't want to pay to have their food professionally analyzed for nutritional content, nor do they want to have their kitchen inspected by the health dept. I can understand such strict rules. I don't want to consume food made by just anyone, anywhere. Plus there's a huge liability factor for the person making the food, should they make someone ill.

As a professional cook I think it would be quite easy for a home cook to comply with restaurant standards if they have good standards of hygiene in the home. It's not too expensive to take a simple health and hygiene course and ensure you comply with the rules. It's just a matter of being scrupulously clean and hygienic and keeping simple records.

Where does one buy a piping bag?

Look in the Wilton cake decorating supply corner of any craft store. You'll need the bags, a plastic coupler (visible on the top of the bag), and the metal tip with the right size opening. The couplers and tips are reusable. The bags are not.
Don't put the bags or the tips into the microwave if your chocolate hardens. Better to leave some chocolate out of the bag and reheat that, or use a plastic squeeze decorating bottle that you can dip into hot water again to soften. Don't let water and melted chocolate ever meet though, or your chocolate could seize up.
Easiest and fastest and cheapest way? Put the melted chocolate in a Ziploc freezer bag and snip the TINIEST bit off the corner. Doesn't take much, since the hole will end up twice the size when the double layer of the bag corner actually opens up. No mess to clean up after. Those couplers and tips have a way of finding the garbage disposal opening in the sink; AMHIK. Also, the tips can be hard to clean thoroughly unless you buy the tip cleaning brush that Wilton makes.
I found I can use Ziploc freezer bags with the couplers and tips, and skip buying the decorating bags. You just have to cut a hole big enough for the coupler and the tip. But it works.

Some decorating bags are reusable (for professionals), but I don't know anyone who uses them at home. They are a mess to have to clean! Disposable is the way to go. Wilton sells them, or you can do the Ziploc.

Look really like a football. It made me hungry for Chocolate cover Strawberries. I can get them at our Dutch Market in town for $12.95 a pound. I can get 12 chocolate cover strawberries for around $8.00. I'm not to much into football, but I do watch the Super Bowl.
