‘Tis the season for pumpkin flavored everything! Have you ever tried a pumpkin spice latte from Starbucks? They’re all the rage and quite delicious, but I’m not a fan of the high sugar content, so I decided to make my own version a couple evenings ago. Caffeine any later than about 4pm tends to keep me awake at night, so I came up with a pumpkin spice latte recipe (posted below) that doesn’t contain coffee. I know that means that it’s technically not a latte, but “pumpkin spice beverage” just didn’t sound right. I plan to post one with coffee very soon.
Pumpkin Spice Latte (No Coffee)
Ingredients
- 1 cup canned pumpkin
- 5 cups 2% milk
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp allspice
- 1/8 tsp cloves
- 4 Tbsp brown sugar
- 1/2 cup heavy whipping cream Can omit to make the recipe low fat
- Extra cinnamon for topping
Instructions
-
Combine canned pumpkin and 2 cups milk in a large saucepan. Cook over medium heat, stirring constantly until mixture begins to thicken and bubble (about 5 minutes)
-
Whisk in spices and sugar. Turn heat down to low, and continue to whisk frequently. Meanwhile, heat 3 cups milk in microwave until approximately 140 degrees Fahrenheit (60 Celsius).
-
Using an immersion blender, mix the hot milk (in a tall container, to prevent splatter) until frothy.
-
In a separate tall container, use immersion blender to whip the heavy whipping cream (should take 30 seconds or less).
-
Fill each mug 1/2 with pumpkin mixture and 1/2 with frothed milk. Add as much whipped cream as desired, and stir to combine. Top with cinnamon. Serve immediately.

This sounds great, I love hot drinks. I will give it a try, thanks! I am expecting also, at the end of January. It’s a boy, after having four girls!
Ellie
That’s exciting, Kathy! Congratulations!

Congratulations Kathy!

Caffeine, my first baby I was very careful. My second I drank coffee, my third I drank coffee by the potfull…
I don’t know how I was so conscientious for the first and grew unaware of being addicted to caffeine by number three. She has some problems and I seriously wonder if the caffeine caused an issue related to development. Caffeine, caffeine, caffeine….we will never give it up I doubt. We like our caffeine.
Wondering...
I thought you were going to tell us the gender! You should hide it in one of your posts and see if we figure it out!!! I have my guess and I can’t wait to find out if I’m right or wrong lol

Noooooo….. she mustnt do that. I’m already getting annoyed by how long she’s taking…. No longer please!!!! 😉

On her FB page it reveals the gender of her baby (I think) as she has put up a post on how she made her gender reveal cake 😉
The pumpkin spice latte sounds delicious but I’m not sure if we have c a nned pumpkin here in Australia. Will check when I go shopping next.

Seems like you’re trading caffeine for fat in that recipe. There are almost 70 grams of fat in that recipe, over half of it being saturated fat. There’s still 1/4 cup of sugar total, or about 45 grams of sugar, not counting the natural milk sugars.
I think I’d opt for unsweetened caffeine-free pumpkin herbal tea. Stash Tea makes one, and Trader Joe’s has their own herbal blend.
Ellie
When I make the recipe with coffee, I’ll likely use approximately the same amounts of the other ingredients, so that’s not the case. The beverage still tastes wonderful if you completely omit the whipping cream. Even with the whipping cream and 1/4 cup sugar (divided among 4 servings), the total fat and sugar is less than the average McDonald’s or Starbucks drink. Especially the sugar. McDonald’s and Starbucks really load their drinks with sugar. It’s quite eye-opening to look up the nutrition facts online. That being said, unsweetened, caffeine-free herbal tea is always going to be the healthier choice, but most folks enjoy a treat now and then. 🙂

People can make their own choices about what to drink. If you think it has too much fat, then don’t drink it. You don’t get to decide what is right for everyone else.

Thanks Ellie! I am definitely trying this. It’s not fall until you’ve had your first pumpkin spice drink 🙂
Ellie
I completely agree, Julianna. Let me know what you think of it. 🙂 I can’t wait until the weather cools down so we can visit a corn maze/pumpkin patch. Lots of fun fall activities!

Kathy
I just made this and am thoroughly enjoying it! I cook and bake ALOT, and I would never thought of making something like this. Good job, lol! I love it! Nice break from coffee, tea, or hot chocolate.
Ellie
I’m glad to hear that, Kathy! Have a wonderful day.

I stopped at an icecream shop yesterday and got a pumpkin spice topping sundae, and I think you influenced me to do that!
Ellie
LOL! Was the sundae good?

This sounds really good and I also like that my kids can drink it. I love coffee but don’t want to give coffee to my kids, but they will love this.

I’d like to try the one with coffee when you make it.

Thank you sooo much for sharing this recipe. I look forward to making this.

Yum this was delicious! I divided it by 1/4 for a single serving and used soy milk, and it came out perfectly!
