During our drive back from vacationing in Virginia Beach last month, we stopped in to see the future in-laws of Joseph, my brother-in-law.His future mother-in-law made us the most delicious blueberry cobbler that any of us have ever tasted. We asked her for the recipe and were shocked to find out how simple it is. Don’t blink or you might miss it.
Mr. Handsome and I picked blueberries today, so I’m going to make a batch of cobbler tonight!
Easy Blueberry Cobbler
Ingredients
- 1 cup sugar
- 1 cup flour
- 1 stick butter
- 1 egg
- 3-4 cups blueberries
Instructions

Mix sugar and flour, and cut in butter.

Add egg and berries, and mix again.

Bake in a greased 9x9-inch pan for 1 hour at 350F.

That sounds like a very old-fashioned type of recipe. I can taste it now, just from that picture! Sometimes simpler is better. It reminds me of an old apple crisp recipe, and the easy recipe I use for strawberry shortcake. No special ingredients needed. The apple crisp recipe came from a 1940's Betty Crocker cookbook, if I recall. The red & white checkered cookbook that nearly every bride had back then. Enjoy your cobbler.

Only the baking part of the 1940's version is still valid. The rest of the recipes, well, some can be yuck. They used to boil the daylights out of vegetables & cook meat til it was shoe leather. Plus the readily available ingredients back then weren't what they are today. But recipes for breads & cakes & desserts from that era are still OK. You can find the old copies of that book at used book stores or book sales or yard sales. Better yet, find a family member who has one you can borrow, or ask a friend if they have their grandmother's version. Red checkerboard covers and metal rings inside, like a binder. It was a shower gift to practically every wartime & post-war bride.

Ellie it sounds great! I will have to keep that in mind for next time I decide to be bad lol. My normal weight is around 85 and lately it's been closer to 90 plus my stomach seems huge some days…It was flat after pregnancy but it seems like I've been making bad nutrition choices and it's catching up to me so I need to discipline myself. My weight has been as low as low 70s which I admit was unhealthy so I decided to change that and slowly was able to bring it back up

I heard splenda is not a healthy alternative…I would possibly use honey though and 1/4 unsweetened apple sauce instead of the egg (or maybe sweetened applesauce and no sugar at all!

The recipe turns out best if you cut it in from room temperature, but I'll admit that I sometimes end up melting the butter, and it still works. But I know that's not the mark of a professional baker, so maybe I shouldn't have admitted it. LOL.

Oh, yes. My favorite is blackberry, and I love cherry. I love fresh out of the oven cobbler! With vanilla ice cream on top!

I tried this the other night. It was super delicious. It was really crusty. I noticed that when I put it in the oven the mix was really dry but it came out nice. I rubbed the butter, sugar and flour together, the butter came straight out of the fridge. It was pretty sweet I prob will put less sugar in next time.

I made this last night and it was really good. I did add about a teaspoon of vanilla and did about 3 cups of blueberries. Next time I'll do about 2 1/2 cups of berries and a little more, maybe 1/3 cup more flour and sugar. I like my cobblers a little more cobbler-y (is that even a word lol). I forgot to buy ice cream so hubby and I just ate this on it's own. But this is definitely a keeper. I think I'm going to try it with peaches next.
