This is a recipe that both vegetarians and meat lovers can enjoy. It is full of flavor that is satisfying for adults and kids alike.
Healthy Pasta Salad
Servings 6
Ingredients
- 12 ounces pasta bow tie pasta works well
- ½ tsp garlic powder
- 18 ounces cherry tomatoes
- ½ cup black olives sliced (optional)
- 2 Tbsp fresh chives or 2 tsp minced onion
- ¼ cup fresh basil or 2 tsp dried basil
- 1 cucumber, large
- 4 Tbsp white wine vinegar
- 7 Tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions

Boil pasta, adding 1/4 teaspoon garlic powder to the water.

Combine cooked pasta, chopped tomatoes, sliced olives, chopped cucumber, and minced chives (or onion) in a large bowl.

Add basil, and stir to combine.

In a small bowl, mix white wine vinegar and olive oil. Stir into salad.

Add 1/4 teaspoon garlic powder and salt/pepper to taste.

Thank-you for the recipies Ellie. The ham could be replaced with tofu cubes or cheese cubes, I have had this kind of salad with cheese and ha cubes in it, but no one gave me their recipe and I have not yet made it myself. It is a good idea.

This is totally unrelated to this post, but I wanted to ask your advice because I view you as a godly role model. After reading 1 Corinthians 11, where Paul talks about women wearing head coverings, I began to look into why very few Christian women continue this practice. I ran across this article: https://bible.org/seriespage/22-1-corinthians-111-16-its-issues-and-implications and think it makes a good point. However, I am hesitant to cover my head (for prideful reasons, I'll admit). How do you reconcile this? Thank you. 🙂

I'm not an expert on head coverings, but I'll share a few points with you:
The head coverings in 1 Corinthians 11 seem to be a symbol of modesty and submission to one's husband.
From my research, I found that the practice of wearing head coverings continued into the early 20th century. The types of head coverings (whether it was a bonnet, shawl, hat, etc) reflect the fashions of the time. When hats fell out of style in the mid 1900s, the practice of wearing head coverings was also dropped, as society no longer saw it as a symbol of submission and modesty.
Here is a paragraph from an article (http://www.gotquestions.org/head-coverings.html) that I found to be interesting:
"In today's culture, we no longer view a woman's wearing of a head covering as a sign of submission. In most modern societies, scarves and hats are fashion accessories. A woman has the choice to wear a head covering if she views it as a sign of her submission to the authority of her husband. However, it is a personal choice and not something that should be used to judge spirituality. The real issue here is the heart attitude of obedience to God's authority and submission to His established order “as to the LORD” (Ephesians 5:22). God is far more concerned with an attitude of submission than an outward display of submission via a head covering. First Timothy 2:9-10, 'I also want women to dress modestly, with decency and propriety, not with braided hair or gold or pearls or expensive clothes, but with good deeds, appropriate for women who profess to worship God.'"
