A few weeks ago, I told you about Mr. Handsome’s birthday celebration and promised that I would share the recipe for the ice cream cake that I made him. Now I know it’s the dead of winter for many of us, but my personal opinion is that ice cream can be enjoyed at any time of year–especially if it’s in cake form.
Ice Cream Cake with Oreo Crust
Ingredients
- 15 Oreo cookies I use chocolate-stuffed
- 4 Tbsp butter, melted
- 2 cartons ice cream (1½ quarts each) 2 different flavors
- ¼ cup mini chocolate chips
- chocolate syrup and extra cookie crumbles for top of cake
Instructions

Place Oreo cookies in a Ziploc bag, and crush with a rolling pin. In a bowl, combine cookie crumbles and melted butter. Stir, and then press into the bottom of a pie plate using a spatula.

Place pie plate in freezer for 1 hour. Then, press one flavor of ice cream into the pan. Be sure to leave room for the second flavor. Sprinkle 1/4 cup mini chocolate chips over the top, and press them into the ice cream with a spatula. Freeze for 30 minutes.

Press second flavor of ice cream into the pan, and freeze for 30 minutes.

Drizzle chocolate syrup over the top of the cake, and sprinkle with extra cookie crumbles.

Freeze 30 minutes (or longer), and serve. Enjoy!
Recipe Notes
If you use a pie plate as I do (as opposed to a regular circular pan), you will likely have some ice cream left over.

Sounds good Ellie! My family's favorite is take a big tub of cool whip and mix in 1 pkg of crushed regular Oreos. Put half of the mixture in the bottom of a 9×13 pan. Put 1 box of vanilla ice cream (slabbed and laid down on top of mixture) in the middle and then put the rest of coolwhip mixture on top and freeze. So so good and easy! You can even add some chocolate sauce on top of the ice cream before you put the rest of the cool whip mixture on for extra chocolate flavor if you like it like that, also!

As good as this looks and sounds and believes that ice cream is just as good in the winter as summer, it's just ice cream and crushed cookies. No cake.

I've made this for years. I call it Ice Cream Pie. It is great for parties, family get togethers and birthdays or other special occasions. You can use different ice cream flavors and toppings as well. It certainly makes a nice presentation. Thanks Ellie! ~CS

Because of Ellie's graciousness, I'm going to assume she has better things to do than answer your rudeness. But keep in mind your question might someday be asked of you too, if you ever post a food item picture. Someone may ask you,did you eat all that? I'm quite sure they did not plop the whole thing down on table with two forks and eat all in one setting.

I don't normally comment on this blog, but I am rolling my eyes over this comment. Maybe she and her husband ate the whole pie, maybe they shared it with friends, neighbors or coworkers. Who cares? If you are not interested in this recipe because of health concerns, pass it over and move on. There's no need to post rude comments or throw shade for someone making and enjoying a once-a-year birthday treat for their spouse.

I didn't read that as rude. I too thought it looked like a lot for 2 people so I wondered if they had a party, but I seem to remember they didn't. So what happened to the whole "pie" there?

Why couldn't you eat all that? It's common sense to know a person wouldn't eat it all in one setting-you stretch it out a couple+ days if just the 2 of you. But you don't really know if they had friends in to help eat it or not! It's not really our business. Please be gracious to Ellie as she is to us and be happy for their birthday treat!!!

I'm sure they Ellie cut a slice for herself and her husband and then covered it and placed the remainder of it in the freezer for another time. You can refreeze the pie people lol.
