Growing up, my family rarely went out to eat, but when we did, one of our favorite items to order were loaded nachos with all the fixins.
A while ago, I mentioned loaded nachos to Mr. Handsome and was shocked to find out that he hadn’t every tried them. I just had to share this wonderful experience with him, so I decided to whip up a batch…and boy were they good! Instead of the usual ground beef, I tried pulled pork. Best culinary decision I’ve ever made.
Here’s my recipe:
Ingredients:
18-ounce bag tortilla chips
1.5 lbs pulled pork*
2 cans black beans
4 tomatoes
2 bell peppers
Homemade queso (click here for my recipe)
Homemade BBQ sauce (recipe is included in my BBQ wings post)
Shredded cheddar cheese
*I use my slow cooker pulled pork recipe, but I leave out the onions. My recipe calls for 3 lbs pork shoulder, so I save half the pulled pork for leftovers. (If you don’t have pork shoulder, pork loin works, as well.)
Directions:
Chop the tomatoes and peppers. (Mr. Handsome wanted me to share a photo of his perfectly sliced peppers.)
On a greased cookie sheet or baking stone, assemble the first layer of nachos, using half of each of your ingredients:
Chips
Pulled pork
BBQ sauce
Tomatoes
Peppers
Beans
Shredded cheddar cheese
Now, add a second layer:
Chips
Pulled pork
Tomatoes
Peppers
Beans
Shredded cheddar cheese
BBQ sauce
Bake at 350F until cheese has fully melted (about 20 minutes). Drizzle with queso, and serve.

You can do the same thing with ground beef. No need to make pulled pork first. I've cooked ground beef, added some chopped tomatoes and salsa, seasoned it, added cheese, and served as a warm dip for tortilla chips. I've also stuffed it into flour tortillas with lettuce and sour cream, for a "wrap."
Then there's the whole "7 layer dip" thing with the refried beans and everything else, but that I serve cold.

Do you really enjoy bottled BBQ sauce that much? I find it too salty, and it tends to overwhelm whatever it's on.

I dont get this question. Ellie never mentions bottled sauce. Her recipe calls for scratch-made BBQ sauce.

Maybe they meant BBQ sauce in general? Homemade or bottled? (I'm not a fan of that taste, either.)

Why would they mean BBQ sauce in general when the reason the person doesen't like "bottled BBQ sauce" is because it's too salty? You solve that problem by making your own sauce (like Ellie does) and make it to your own taste.

It's neat how you come up with different food variations. Looks so yummy…Jane

Anonymous 10/5/2017. Some people might not eat beef I don't eat red meat.

Pork is red meat, too. And against some religious dietary rules.

Yes, the pork in this recipe is red meat. You'd have to do chicken or turkey for white meat. We use more of those two, ground, than we do ground beef. We buy the ground breast meat so it's lowest in fat.

Pork is not red meat it's not under the beef section in the cookbook.

I think she ment Hamburger meat.

Little biology lesson here. Pork meat contains myoglobin, the protein that makes meat red. Pork has less myoglobin than beef, but more than chicken. So pork is classified as red meat, although it appears white when cooked. Beef, veal, pork, and lamb are all examples of red meat, no matter where a cookbook might place them in the book.

"Pork is not red meat it's not under the beef section in the cookbook. "
Yes, because it would be under the "pork" section, of course. Not sure what that has to do with the original statement.

That looks good, so good that it might be a challenge for four hungry people to share that equally!
Cheryl
Being in a large family that tries to get together three or four times a year, and to accommodate some food allergies, this would be a most welcome dish that all can enjoy. Thanks for sharing.

We really like sausage cooked with taco seasoning on our nachos. Our other toppings are salsa, queso, pickled jalapeños, olives, and celery bits (for a crunch instead of lettuce). Your nachos look great, I might try a version like this soon to change up nacho night! I've never done homemade queso, great idea!
