A few months ago, I shared my recipe for healthy homemade pasta salad. With summer just around the corner, I thought I would revisit it and post a video tutorial. Are you looking for an easy side dish to make for you Memorial Day cookout? This recipe is one of my favorites.

Looks delish! Thanks for sharing! Have you ever made this with whole wheat pasta? I like that the whole wheat is healthier, but sometimes the flavor can be too strong for salads. I'm curious about your experience!

It is delicious! I always make it with whole wheat pasta, and it tastes great!

Fresh olives are a healthier alternative to canned (no added salt, and more olive oils-healthy fats!) Kalamata ones are great in pasta salad

Thank you Ellie for posting this recipe and video! I think this will be a great addition to my memorial picnic! I'm the one who mentioned in your Wednesday blog post that I am tired of potato salad. This sounds fabulous and I haven't made this before.

My pleasure! Be sure to let me know how you like it.

Hi, Ellie! I know this is an odd topic to bring up on this post, but I wanted to ask your opinion on something if it's okay with you. This will be the first election in which I can vote and I'm very conflicted on what to do. I want to vote the way Jesus would if he lived in America right now but it seems like there are no good presidential candidates. I understand that politics is quite controversial and often personal, so you don't have to respond if you're not comfortable doing so, but I am curious who you'll be voting for this November. I really respect your opinions! Any advice is welcome! Thank you so much. 🙂

Anonymous, I know you didn't ask for my opinion, but in a nutshell I feel the following: We as Christians are called to care for our fellow citizens and neighbors. Republicans are about cutting taxes and cutting welfare, education and health care for poor American. The Democrats work to straighten social programs, education and health care. Does that mean high taxes? Well, yes, but helping others costs money, money comes from mine and your tax dollars. What's so wrong with people in government working to help the poor?
PS I also believe in gun control. If Jesus walked among us today he would not have a gun license.

But what about the fact that democrats support abortion? And the only reason they are trying to "fix" social issues is because it was their fault it the first place. the housing market crashed in part because of fanny may and Freddie Mack. A government run program. Schools are worse then ever and they are also more controlled by the government and democrats more then ever before. Democrats are trying to eradicate school choice basically school choice is when a kid is homeschooled but for some reason the parents still have to pay taxes that goes to schools to pay for their child's education. Basically republicans believe (and some democrats but they are very few and far between) that if you enroll your child in a private school you should get a tax credit for the amount you were paying for public school. Many parents are dissatisfied with schools run by the government and the problem with those schools is there is no flexibility if your kid is super smart and could be further on in the curriculum then the rest they won't allow he or she to go to the next section or chapter. and if your child has trouble in certain areas it most likely won't get addressed as long they are testing well. sure schools have tutors and guidance counselors but they really don't offer much assistance and I have seen it first hand. the schools don't allow parents any flexibility and when they try to find an alternative it is made harder. also the government is keeping people poor. why work if your getting a paycheck anyways? the more the government gets involved the worse it gets. just look at health care I know my families health insurance has gone up astronomically because the health care mandate and we don't even have obamacare. people can't start small businesses because of heavy taxes. so they go overseas to china as well as down to mexico to be able to do business. which in turn takes jobs away from america and hurts are economy. and now unemployed people can't find work so they lean on the government which was how they got there in the first place. it's all about control read "rules for radicals" that's obama's handbook. it's all about controlling the people/ our rights. And Jesus wouldn't want you to defend yourself? sure they both aren't very good candidates but Trump actually cares about the working man and woman and the ones that can't find jobs where as Hillary said "we're gonna put a lot of coal-miners out of business"

Andrea,
I agree, but Republicans are pro-life, which is definitely very serious something Jesus would be!

I agree that this is going to be a difficult election. I definitely suggest that you pray about it and talk to older folks who share your convictions and have seen many elections. You may be faced with a situation where even the candidate who receives the election in your party does not seem to be ideal, but I would encourage you to also look at the things that the candidate in the opposite party is promising to do. I think that people in both parties will be faced with choosing what they deem to be "the lesser of two evils." My pastor once told me that sometimes God gives a country what they deserve and sometimes He gives them what they need. I know it's hard, but it's important to give the situation over to God and trust that he has a plan. 🙂

Further to the comment: "Republicans are pro-life, which is definitely very serious something Jesus would be!" Actually, I believe Jesus would strive to not judge but rather love everyone. Would I personally have an abortion? I've had two children and declined prenatal screen twice as I am personally pro-life. That said, would I judge a friend or family member who decided to have an abortion? Absolutely, not. Jesus said: "Love thy enemy" – enough said.

Oooh, that sounds good. I love your apron, too. 🙂

Thank you! It was a gift from my husband's cousin. She made it by hand. It's also reversible, with a different pattern on the other side. She makes aprons for all her friends who get married, and she always makes them with a little extra room, so you can wear it both when you're pregnant and when you're not. Lol.

Can you say if white wine vinegar is nonalcoholic? Would you serve something with it to say Jim Bob Duggar who is determined to never sip any wine?
