Earlier this week, I posted my recipe for the seasoned ground beef that I use to make homemade Chipotle burritos. If you’ve ever been to Chipotle, you know there are a lot of ingredients that go into one of their burritos. Today, I’ll share my recipes for cilantro-lime brown rice, pico de gallo, and guacamole (my favorite part of a burrito). Tomorrow, I’ll finish with the corn, beans, and queso dip.
Homemade Chipotle Burritos Part 2: Rice, Pico, Guacamole
Ingredients
Cilantro-Lime Rice
- 2 cups rice, cooked (I use brown)
- 1 tsp olive oil
- 1/4 cup chopped fresh cilantro
- 1 Tbsp fresh lime juice
- 1/4 tsp minced garlic
Pico de Gallo
- 3 tomatoes, diced
- 1/4 cup onion, diced
- 2 Tbsp fresh cilantro, chopped
Guacamole
- 1 avacado
- 2 tsp lime juice
- 1/4 tsp salt
Instructions
Cilantro-Lime Rice

Mix olive oil, cilantro, lime juice, and garlic into the cooked rice. Cover and set aside.
Pico de Gallo

Combine tomatoes, onion, and cilantro in a bowl. Set aside.
Guacamole
-
Peel, chop, and mash 1 avocado. Mix in lime juice and salt. Set aside.
That’s farily simple, isn’t it? Making homemade Chipotle burritos isn’t rocket science, but it takes a fair bit of time and quite a few ingredients.Click here to view the third and final part of my Chipotle recipe.

Ellie I have an idea for you, which is not related to this topic. My idea is that you could fill out online surveys. I am in a couple of Canadian survey company email lists. I make about ten dollars a month in online gift certificates. But today I was a draw winner (exciting), that is an unexpected 100$! Maybe you already do this.
Ask around or search online reviews to figure out which companies are rated best and recommended to sign up with. One thing I did was give a slightly different birthday, (to protect my privacy). When I thought of you watching your spending so closely I thought you might like this as a way to earn money for gifts. I had the best experience with Web Perspectives in Canada. Participating in focus groups for them netted me a few hundred $s and some great gifts too. Just an idea for you. Best wishes.

Just got a cheque in the mail today for $100 from one survey company, and in the past I got a $ 25 gift card for Visa – both times I won a draw held by a he companies. Doing online surveys is worth it, in my experience! Plus getting to weigh in ones answers on varied topics gives one a sense of mattering!

Ellie, sorry for the typos, I use a little tablet and it is catchy sometimes. Cashed my cheque this afternoon and being so happy about it I told the teller where I got it and he wanted to put a hold on it for a week because it came from an internet based source
(it is true that the internet can be fraught with scams, but I am quite confident this is a reliable company that I won from this time. I am not debiting my account to send funds to anyone, after I cashed the cheque that just went straight into ma purse!)
