A reader asked that I share my recipe (which is actually my mother-in-law’s recipe) for shepherd’s pie, one of my husband’s favorite meals. It’s quick, easy, and oh so delicious!Here are the steps with pictures, and I have also pasted the full recipe at the bottom of the post. Enjoy!
Shepherd's Pie
Ingredients
- 2 large potatoes
- butter and milk to mash potatoes
- 1 lb ground beef
- seasoned salt
- 1 small onion
- 1½ cup frozen green beans
- 1 cup frozen corn
- shredded cheddar cheese.
Instructions

Steam or boil two large, peeled potatoes until tender. (When I'm crunched for time, I steam them in the microwave.) Remove from pot, and mash with butter and milk.

Meanwhile, brown 1 pound ground beef (seasoned with seasoned salt, to taste) and sauté small onion (chopped) in a large skillet.

Place 1-1/2 cups frozen green beans and 1 cup frozen corn in the bottom of an 8x8 pan.

Add browned beef and sautéed onions.

Add mashed potatoes, pressing firmly with spatula to ensure that ingredients don't fall off the side of the pan. Sprinkle with shredded cheese.

Bake at 400F for approximately 20 minutes (until cheese is melted and pie is hot throughout).

That's one step I forgot to photograph. (I'll try to remember to do that next time I make it.) The only difference in a appearance between the finished product and the fifth picture is that the cheese is melted.

Obviously, but a plated picture would show all the neat looking layers. If you photographed all the meals you make, eventually you could compile an interesting cookbook that might appeal to young homemakers. Pictures of food are something people love to see. Also it helps people visualize their goals.

Hi Ellie,
When I make it I use some timed tomatoes and tomato paste or taco spices with the meat part. I also mix the vegetables in with the meat, frozen spinach goes well with it once it's defrosted and mixed in. Makes it even more yum, at least we think so. And sometimes it's nice to do half yam half potato to make it less high GI. Or half cauliflower and half potato, it still tastes like potato!

Ellie, I'm a vegetarian but it sounds great! I may try it without the meat (and if I find a good substitute for the cheese I might do that too). I think you mentioned somewhere that you ate more vegetarian meals growing up. Do you have any you could share?

You could totally make it without meat. Growing up, we ate very simply. My mom made a lot of rice mixed with veggies. She cooked the rice in chicken broth (or you could use chicken-flavored vegetarian broth) to make it more flavorful. Most of the veggies we ate were plain, but she did make some fancier veggie dishes. I'll have to ask her for some recipes so I can share them.

I wanted to let the you and your reader know that Morning Star Farm makes a great vegetarian ground beef replacement called Griller Recipe Crumble. It takes to any flavoring very well and makes an amazing shepherds pie! I too make the top layer with mashed cauliflower as I am unable to eat nightshade vegetables due to my RA.
The fake meat is also fantastic in tacos/taco salad!

I'm trying to make the transition to coconut oil but can't get over the coconut taste in my food. I have the same one as you, from Aldi and only like it in certain meals. Do you know if there is one that doesn't have the taste or smell?

We make shepherd's pie with chicken instead of ground beef. We also put French-fried onions on the top, beneath the cheese. Shepherd's pie is one of my family's favorite meals!

I think I would use ground chicken. The texture would be better than diced chicken.
