This salad smells and tastes like summertime. Those of you who have gardens will likely be able to use some of your produce to make it, but even if your ingredients aren’t fresh off the vine, it will still taste like heaven. The best part is that it’s incredibly easy to whip up. I purchased a basil plant (only $3.50), as well as the kale and mozzarella cheese log from Trader Joe’s. (This isn’t a sponsored post or anything of that nature–I simply love that store!)
Tomato Basil Kale Salad
Ingredients
- 1 1/2 cups tomato, chopped
- 1 cup fresh mozzarella, chopped
- 2 cups shredded kale
- 3 Tbsp fresh basil, minced
- 1 Tbsp white wine vinegar
- 2 Tbsp olive oil
- 1/8 tsp garlic powder
- salt and pepper to taste
Instructions

In a salad bowl, combine tomato, mozzarella, kale, and basil.

In a small bowl, whisk together vinegar, oil, garlic powder, salt, and pepper. Toss dressing into salad, making sure salad is fully coated. If you desire more dressing, make a second batch.

This looks and sounds delicious! I will be trying it. We have been eating kale for over 30 years since I started growing it. Before then we could only find it canned as an import from Holland. My parents were from Holland and I ate a lot of canned kale growing up as it was a staple in their diet. It is great how far produce selection has come. Thanks for asking Ellie. The weather had several thunderstorm and tornado warnings. We felt it was prudent to stay home and not be part of traffic and crowds. Indeed, 3 tornados hit about one hour from us and another 2 a bit closer. Noone fatally injured. So we were blessed with opportunities between heavy rain bouts to garden, enjoy family and friends close to home and thank God for all our blessings.

The salad looks good. Today in a thriftstore I saw a baby bullet food processer. That’s what you need, Ellie and Mr Handsome, for little buddy’s meals. Also I was looking at pouches of organic baby food in the store. The sugar content per pouch was like 26 grams, even for veggie foods. I don’t get that. It seems like a waywayway too much sugar to be feeding to an infant. You will get all the same nutrients and have better food and better control and more convenience if you just puree some foods you prepare. That will be interesting when you start to tell us what you feed your baby too.
